Bangladesh's Traditional Cuisine “A Window to the World from APU”

A Feast for Celebratory Occasions

Rakib, a student from Bangladesh whom I became friends with in class, introduced me to a traditional dish.

"Panta Ilish" is a dish originating from Bangladesh, combining Panta bhat (rice cooked and soaked in water) with fried Ilish (Hilsa fish, similar to sardines in Japan). It's a feast served on auspicious occasions like "Pohela Boishakh" (also known as "Pohela Boishakhi"), the festival celebrating the Bengali New Year on April 14, and at weddings. Each household has its own unique flavors and variations.

In the past, it was commonly eaten even on ordinary days, but with changes in dietary habits like the advent of junk food, its consumption has decreased compared to before. However, this dish, enjoyed by the whole family during celebrations, is special to Rakib. When he returns home for the New Year, one of his joys is his mother preparing it for him; he says this is truly the taste of his hometown.

A traditional flavor loved and passed down through generations. I hope they will continue to cherish it and pass on its wonderfulness to the next generation.
